Harvest Ale; a true Irish ale, brewed once a year with Tipperary grown Bramling Cross hops.Every September, when the crop is just right, we trek up to rural Tipperary and cut down the 12ft hop vines. Freshness is key with 'Wet Hop' beers, so the whole team are on hand to pick the cones through the night for an early morning brew.Our Harvest Ale saw hop additions every 10 minutes during the boil as well as a huge addition at the end of the mash.The resulting ale is a deep gold colour and has a subtle blackcurrant flavour balancing out it's bitterness.
