A series of mixed culture sours, fermented in aselection of oak barrels and blended to balanceacidity prior to introducing fruit. Composition 5 is ablend of golden sours, fermented in oak puncheons,then refermented on black raspberry, and bottle conditioned with champagne yeast. Please keep cool, pour carefully and expect some sediment.
