In 2022 we drove over to the guys from Backstabber in Herznach and filled our 500l fermenter with delicious freshly pressed apple juice.Using bottle dregs from a nice wild cidery in Oyambre ESP this batch fermented fast, using also the yeast present on the skin of apples. This so called wild cider has a strong funky characteristic with additional apple taste and a very very dry finish.
