A blend of heritage cider apples (American, Norman and English varietals). 2022.In 2022 we had the pleasure of working with apples hailing from regions right across world (grown in Ontario of course)This bottle is a blend of Winesap, Fréquin Rouge, Burgundy, Burford, Porter's Perfection, and Calville Blanc d'Hiver.We pressed them together and bottled them as a pét nat, before hand disgorging each bottle a la volée (without freezing the necks).What's it like?: Highly, highly sparkling, this blend smells like butterscotch and vanilla. While completely dry, it has big perceptual sweetness, and a little prickle of clove and all spice on the finish.Tannic, but less so than ciders made exclusively with old world fruit.
