Doppelbock was specifically created by Franconian Monks in the 17th Century for sustenance during fasting periods. We used both malted barley and malted wheat, some of which have been heavily caramelised and roasted, along with ale yeast fermentation that would be recognisable to the 16h century bock aficionados. This beer took a further twist on modern interpretations by being stored in lowland whisky casks for 168 days.Wood / Jam / Spice
