This variant of Seditious Ways is a dark sour beer aged in bourbon barrels with an unruly amount of tart cherries. Fermented with Brettanomyces and English Ale yeast and soured with Lactobacillus bacteria, Bourbon Barrel Aged Seditious Ways presents a union of flavors. Smooth notes of maple, oak, and caramel from the bourbon barrels accentuate the daring character from the cherries and enhance the decadent, dark chocolate notes in its foundation.
