Style purists beware! We wanted to make a beer of our own using some seasonal ingredients that had popped up/been leftover from other beers. In particular the use of malted corn, raw wheat, undermodified pilsner, Perle hops and a farmhouse yeast. The resulting concoction fits somewhere between a Belgian Witbier and a Saison. To really accentuate the phenolic/clove like notes associated with these styles, a ferulic acid rest was performed on the mash. Expect a tonne of clove, white pepper, banana, orange peel and some herbal notes from the Perle hops. Not as dry as you might expect, more haze than you might expect but full of Belgian flavour.
