2021 Barrel AdoptionIDENTIFICATION: BEIGEA barrel aged micro? We have been playing with fresh micro ipas in 2021. A difficult beer to produce to ensure enough body & sweetness whilst still drinking like a beer. We took a punt!The same base beer as the recent early bird micro ipa, was aged in a Cognac barrel for 6 months. The thoughts were: the low abv would allow for a great cognac influence with less maturation time. Also, a nutty sweet cognac could work in harmony with the peachy sweet London ale III yeast. The results took a few months more than anticipated.Once the balance was struck, we emptied the barrel to stainless steel tank and added a low 5g per litre of DH purely to brighten up the beer again after the wood contact.
