Velvet is our apricot farmhouse collaboration with Side Project Brewing out of St. Louis, MO. We use both of our house cultures in the base beer and then age it with over four pounds per gallon of organic apricots. We haven't made this blend in over two years. f you've had older blends of Velvet, you're aware that the beer can come off quite acidic. I'm super happy with how this blend came out - it's acidity is completely restrained and balanced. Side Projects culture comes through amazingly as well, even with all the apricots used. It's perfectly carbed and is tasting great.
