Sourced from our cellar archives is Avalon, a 2011 slightly sparkling traditional method apple wine. 2011 was our first sizable vintage of cider cleaned form our local landscape. We barrel aged Avalon in a bourbon barrel for two years, before bottle conditioning with organic cane sugar. Avalon has been bottle aging since 2013, at first in the basement of our birthplace fermentory, which was an old farmhouse cellar in the village of Barnard, and then making the journey in 2016 to our farm cave where we currently age all of our wines. This gem has only gotten more crisp and refined over time, and is testament that cider can in fact age in bottle.
