Top-Up Red

We always hold onto a little of each batch of barrel-aged sour beer to top-up the barrels once or twice during aging. Evaporation (the angel's share) adds up to about 10% of the volume each year. In cases like this we had a little extra, so we wanted to share the tart-funky-red base for Opulence with you! The rest of the batch is sitting on 260 lbs of Maryland cherries now, but it won't be ready for a few more months!
