bottling date: 23/07/2024We brewed a low alcohol lambik - a true meerts, on which we macerated Pineau D’Aunis (41%) and a small portion of Chenin Blanc (7%), originating from the illustrous Jean-Pierre Robinot, and Muscat (52%) from Christian Binner. We macerated the grapes for over five months on a wooden barrel, with a final fruit intensity of over 420 grams of spent grapes per litre of grape meerts. All grains for this brew & blend were sourced in Pajottenland.
