Every year we travel far and wide to select the best possible representations of our favorite hops, and this past year we were blown away by the Nelson and Mosaic we got to rub and sniff. Most notable was the Mosaic; it was some of the most intense and complex Mosaic we have ever smelled, not just emitting the expected aromas of ruby red grapefruit, honeydew, blueberries, and papaya but also had some massive notes of diesel, sauvignon blanc, gooseberries, guava, and passion fruit that were very reminiscent of a Southern Hemisphere-grown hop. Instantly we knew we'd have to start brewing an IPA highlighting both of these hops in all their glory.
