We took a cask of our Tuatara and let it sleep for 3 months on some Bootleg Biology Funk Weapon #2 Brett Yeast to bring more Pineapple & Apricot, with a hint of citrus funk to this fruit bowl of flavoures Pale Ale.Rakau and Motueka hops from New Zealand bring apricot, passionfruit, and citrus fruits, while Saturated NEIPA yeast is great for biotransformation to boosts the tropical fruit esters in the beer.
