For brett juice, we used the Black Berry, Raspberry, strawberry and Boysenberry brewjuice, added some wort to it to dilute fruit concentration down to 20% of the beer. From there we pitched Brett yeast and waited for 3 months. After full attenuation, we added Brandy oak barrel chips in the fermenter and waited another month before kegging.
