Old Cellar is a silky, luxurious Barleywine aged for two years with a solera barrel aging method, in first a bourbon, then a dessert wine barrel. It displays the most intense expressions of barley malt & barrel. Brewed with a largely forgotten brewing tradition called parti-gyle mashing, it utilizes the sweetest, most concentrated grain sugars. An extended boil, intense fermentation and long barrel aging on lees add a spirited, savoury dimension and an oily, warming body. The complex barrel aging creates a deep and intense barrel character. This extravagant ale will keep you warm this winter and is best enjoyed by the fire with a book. Old Cellar can be aged for up to 20 years.
