One of the many joys of the Labyrinth series is being able to freely experiment with new ingredients—like Phantasm—in our hoppy beers.Phantasm is powder procured from the skins of New Zealand Sauvignon Blanc grapes that increases the content of thiol precursors in beer, which intensifies the tropical aromatics of the hops being used.For our first time using the product, we opted for our house yeast and introduced the Phantasm during both the whirlpool and fermentation.We have plans to use the Phantasm with different yeasts and introduction periods, but that will have to wait for future routes.
