This golden sour is fermented with a strain of Brettanomyces isolated from a renowned Belgian trappist brewery.The strain provides intense stone fruit, peach, apricot characteristics when used for primary fermentation.This fruit forward base beer was then re-fermented on 200g/l of Spanish white peaches.
