About 15 months ago we made a classic Saison with Rowley Farmhouse Ales that went on to win a medal at the 2018 California State Fair. We took some of that original beer and filled wine barrels with them. One of them was a Pinot Noir barrel that we wanted to keep “clean” and free of souring bacteria or wild yeast. Symbiosis: Pinot Noir is simply an expression of how a barrel affects a beer over time.⠀After sampling the beer we get heavy notes of oak, subtle berry flavors from the Pinot, and a slight pepperiness from the original beer.
