"This beer was inspired by an afternoon spent bythe water’s edge on Eriska. From the moment ofarrival, the shore had a magnetic draw and ona foraging trip, sampling some of the sea kelpoften harvested by the chef, I was reminded of anidea floated by one of my colleagues a short timeago for a combination of seaweed and fennel ina beer. Since both were found in close proximityon the island the concept seemed to furtherinsinuate itself and I chose the classically saltedSaxon style Gose as the best vehicle to showcasethese flavours.
