According to beer scholars, due to compromised sanitary environment, Saisons were either sour due to infection, or very bitter because brewers were using heavy hopping to prevent infection. While we have done some basic and hoppy variants of Saison, we had never tried sour ones. That one is our first one and given the result, probably not the last.
