Deep Forest

This mead is the result of a collaboration with our friends from Augustowska Miodosytnia in Poland. We joined forces to make a refreshing, modern mead, using very traditional ingredients. Deep Forest is made as a Zbicień – an old session mead tradition from the Polish-Lithuanian Commonwealth, made from pine shoots boiled in honey and water. To add a Norwegian twist, we have spiced it lightly with juniper berries and bog myrtle, to add complexity and drinkability. Deep Forest works well alone as a thirst quencher, but is also a good pairing for light summery meals.
