This time we went with a Bohemian Pilsner. Compared to a German pilsner the Bohemian (Czech) style is a little more bitter. Balanced against this is a bit more malt sweetness, a slightly toastier malt flavor, and sometimes even a small whiff of diacetyl, a buttery-tasting compound created by yeast. Altogether these qualities make the Bohemian pilsner a more full-bodied and a little hoppier version of the style than the German one.We used Styrian Goldings and Diamant for hopping which give a wonderful blend of floral, spice, citrus and earthy aromas. The slightly fuller body of the beer is noticeable but doesn't detract from its drinkability. We were surprised how quickly we finished a glass or two while testing it.
