One of the main ingredients of belgian quads is dark belgian candy sugar. This beet derived sugar gives this style much of it's characteristic flavors and dries the beer out due to it's fermentability. I got my hands on some raisin juice concentrate, which I realized tasted remarkably like Belgian candi syrup with loads of complex dried fruit, coffee, chocolate, and caramel character. I substituted this raisin juice concentrate for the traditional belgian candi sugar. The beer turned out rich and complex but relatively dry for such a big beer. Full of date-like fruit, toast, caramel, delicate Belgian yeast esters and a touch of tartness from the raisins.
