Velvet Poppy

We put our heads together with our friends from Funky Fluid Brewing in Warsaw on this imperial stout inspired by Makowiec, a traditional Polish poppy seed roll dessert featuring pastry, stuffed with poppy seeds, dried fruit, orange zest, and spices. For our interpretation we started with a hefty portion of wheat in the grist, plus poppy seed butter and orange blossom honey in the whirlpool. After fermentation we then finished it off with an infusion of 50lbs of hand-toasted poppy seeds and 5lbs of vanilla beans from Brazil and New Caledonia, selected for their rich dark fruit character. We think the poppy seeds come through really nicely in this beer, with their bright citrusy & earthy notes playing off hints of honey and vanilla. Na zdrowie!
