Rare beer challenge 2023...Creating wonderful and unique brews with odd and unusual ingredients and processes.This year is about sustainability. We work closely with a local genius who collects our spent hops for his compost farm - his main business is distilling wilding pine oil. As a fun extra the oils we got for this particular brew is made from unused Christmas tree sales! Approaching a beer made with pine oils was a pretty unique challenge as it is an intense product. We decided on a classic pine driven west coast IPA in a new "cold IPA" format. Very clean, crisp and dry to show all the piney goodness.Blended in with these Christmas tree oils is some locally grown lemon verbena herbs, this is for depth and complexity in the beer.Expect aromas of strong and fresh pine backed up with hints of citrus. The mouthfeel is dry and crisp with flavours of green pine and a long medium bitterness.
