2022 Barrel AdoptionWe are converted! Oak simply does wonders for pils and lager styles. We have gone down the rabbit hole in the barrel programme, with a range of layered / lager yeast beers, from light lagers to doppelbocks a plenty. There is definitely a soft touch required to avoid sever oxygen pickup though. For the lager barrels we move them as little as possible, moving the tanks to location to avoid a ‘slosh’. What we found by using a fruitier hop profile in the kettle is that we can make those characters from gentle maturation. Irish blend whiskey generally has a bright citrus note, which married with spice from French oak elevates the Pilsner aroma and dries out the finish.
