Into the Labyrinth: Route 15

We’re always curious what certain yeast profiles add to specific hops, so for this exploration we propagated yeast from one of our favorite Midwest IPAs and paired it with Michigan Chinook, Simcoe and Centennial hops in an attempt to make something a little old school. Smooth bitterness pairs with pine, resin and hints of grapefruit for a flavor profile that leans more dank than fruity. A pleasing dryness gives off the nice, light crispy vibe we were aiming for.
