Our brewery came with some old sacks of pale, Vienna, and Pilsner malt... so we used them to dial in our the new 10 bbl brew house. We used most of the wort to propagate our house saison culture and gave the rest away to local homebrewers. Only one 5-gallon keg of the actual malty saison survived.
