Avalonia: Green

Each Avalonia starts with a blend of barrel-aged farmhouse ales fermented with our house mixed culture - typically, those blends are prepared with a particular whole fruit refermentation in mind. For Avalonia: Green, we brought in 400 lbs of green gooseberries. The fruit’s tangy, white grape and kiwi-like flavor is reminiscent of some of our favorite hop varieties and prior to bottling, we added a gentle dry hop of Citra and Nelson Sauvin to complement.
