Membership ExclusiveFinishing bourbons in Amburana barrels has become real popular over the last few years. Often the finished bourbon will have a description like “The result is cinnamon churro and apple pie notes on the palate, and amaretto, glazed donuts, and molasses on the finish”…Apple pie is almost always mentioned!So the day Endless Apple Pie was finished and ready for bottling, we filled our Amburana barrel with it! We tasted the barrel every month, and when the time was right, we transferred it into a wet bourbon barrel to finish aging. While we don’t know the distillery, the flavor notes of the bourbon were exactly what we were looking for “sweet vanilla, brown sugar syrup, and caramel”.Hopefully you’ve had our Endless Apple Pie mead already, it’s been really popular, as it embodied the name perfectly. The barrels have taken down the cinnamon and nutmeg notes and replaced them with a whole new suite of baking spices and complexity. The final mead is simultaneously less spiced than the original, but has many more layers of flavor. It’s a big upgrade, more refined and elegant.This is our first double barrel-aged mead, and hopefully not the last.
