Back once again with more summery Belgian vibes is Tender Things. We’ve been enjoying using our tiny tanks to explore new yeasts, unusual fermentations and exceptional combinations of hops and fruit, and Tender Things is one of those brews that we’ve allowed out into the wild as we’ve been loving it from tank.Built on a super simple wheat base with a light touch of Coriander in the boil. Whirlpool hopped exclusively with Hallertau Blanc for some white wine top notes, we’ve gone and experimented this week with WLP410 yeast which has been phenomenal for both it’s restrained phenolics as well as its fuller mouthfeel. During fermentation we’ve added heavy additions of Organic Williams Pear as well as a complimentary note of Honeydew Melon to finish out.The result is something that’s a Witbier first but with a complimentary and balanced fruit character that’s outrageously refreshing and summery.
