An intense Kriek with sour cherries picked in the wild (Obelya outskirts in Sofia) using two different 1yo lambic varieties. The fruit maceration took 9 full months, and the finished blend clocks just above 500 grams of sour cherries per liter after backblending at bottling. This resulted in a lot of almond and marzipan on the nose, full body and soft carbonation with ageing potential as the fruit dissipates. This year’s vintage also had a very short maceration of local Rosa Damascena, which is famously used in perfumery.
