2021 Barrel AdoptionIDENTIFICATION: WHITEThe dark side always creeps in this time of year. The dark blend is 60% imperial stout and 40% imperial pale. The stout element was aged in an ex Irish single malt ex PX sherry barrel for 9 months while the imperial pale was aged in Old Elk bourbon barrels for 4 months. The combination of the two gives a unique caramelised fruit and nut character with a sweet(ish) finish.The stout picked up a fair amount of alcohol during the maturation process. This can often thin or dry out the beer, by incorporating the pale into the below we achieved sweetness from the bourbon and a spice from the rye.
