Thiols are all the rage in the brewing industry right now. They’ve been known in the wine industry as compounds present in grapes that give off highly aromatic notes, but have since been found in hops! We’ve just needed a way to unlock them. Adding Cascade hops to the mash and using a yeast that is capable of unlocking these compounds, we’ve created a smooth pale ale with notes of passionfruit, mango and guava.
