The very first beer that went through the system at EMC. Many brewers told me to do something simple. Did I listen?OF COURSE I DID NOT LISTEN. IF I LISTENED TO GOOD ADVICE I’D STILL HAVE A JOB.This beer was actually supposed to be an 11% imperial stout, but I changed my mind half way through brew day. I kept the hop regime though, and to be honest it feels like a happy accident - the bitterness gives structure to the sweeter ingredients, stopping them from being cloying.The imperial stout is next though, so watch out for that one.
