Cherry was blended from two different barrels of traditional batches from Fall 2018. We racked the blend into barrels filled with whole, handpicked New Jersey Montmorency cherries. The beer aged on the cherries and their pits for a total of 9 months before being blended. We then laid the beer down in bottle for an additional thirteen months. Upon release, Cherry will be 30 months old.Cherry has an aroma of warm cherry pie, almondy noyaux, baking spices and cinnamon all balanced by a low fruity Brettanomyces character. The acidity is balanced by the tannin from long skin contact and a residual sweetness.
