Leaving behind a single ex-Chardonnay barrel for 26 months. Initially concucted as collaboration with Petition Beer Corner, initially to be a sour Saison using Brettanomyces & organic local peaches, the yeast profile proved it did not need any fruit. Pouring orange-gold. Complex aromatics that are all about peaches, spicy, slightly funky & a lingering dry, boozy finish. Barrel characted really shines through.
