Perpetual Desire is a blend of two alesThe first ale was brewed with Organic barley and Organic spelt in May 2023 wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW before resting aged for 1.5 years in puncheon until it was macerated with 700kg of Organic rhubarb stalksThe second ale was brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW and heavily macerated with Pinot Noir Grapes from Kooyong EstateThese two were blended, with only a small portion of the blend coming from the grape ale, and together were macerated with fresh Organic Ruby Red Grapefruit before bottling.
