Apiary was brewed with New Jersey grown and malted barley and buckwheat with a large addition of New Jersey blueberry blossom honey on brewday. We used a traditional step mash to drive a crisp, dry profile that is balanced by the bittering addition of aged whole leaf noble hops.Apiary presents with a waxy honeycomb aroma and a full mouthfeel balanced by a bone-dry fermentation and high effervescence. The extended conditioning time pushes earthy aromatics of hay and light funk, grapefruit, spice, toasted brioche and honey.
