Originally fermented with a saison yeast strain then secondary fermented with a combination of Brettanomyces and lactobacillus this beer was inspired by our trip around California and our various brewery tours over there. Light, dry and refreshing with an underlying complexity delivered by the secondary fermentation. This beer took a total of 8 months to produce and we hope you enjoy it as much as we do. Cheers!
