Twillight

Inspired by the seasonal shift from darker to lighter evenings, from autumn (when brewed) to springtime (when bottled), Twilight is a beer fermented with apple juice and conditioned on blackberries and quince. It has a well-rounded fresh apple character punctuated by sharper notes from quince. Blackberries add deeper, fruitier tones – but subtly so to preserve the lightness and freshness of the beer.
