Time and Place is the truest expression of the native yeasts in our cidery and on our fruit.Long ageing on tannic apple pomace coaxes out quiet tannins and ripe orchard aromatics. Restrained yet elegant, it is the cider we've always wanted to make.This vintage was made from apples harvested in 2021, and aged in a single barrel for a year before bottling.We only get so many chances in a lifetime to ferment fruit. Each vintage is so precious–and Time and Place is so beautiful we wanted to elevate a portion.We love it. You will too.
