In august 2022 in harvesting season, we take a short drive to our good friend’s hop farm to hand-pick the most glowing green of hops. We use these fresh hops, and no other hops, to make our beer.A saison is a type of farmhouse ale that can cover a broad spectrum of flavors. They can be sour or hoppy, funky or fruited. Our iteration is a simple and straight-forward saison base with complex, but not overpowering, hop characteristics. Pilsner malts lend the saison a super clean base, and a small helping of rye malts gives it some earthy balance and color. The true complexity of this beer comes entirely from the hops that we use, and how we use them.Styrian Dragon hops were the choice for this vintage: a floral hop packed with notes of grapefruit, rose, lemon, and berries. In a fresh state, not in concentrated pellet form, these properties are, obviously, not as concentrated, but we are able to extract far more nuances and subtleties that escape from the hops during pellet processing. Flavors and aromas that you cannot and will never be able to get from pellet hops. We use massive amounts of these fresh hops in multiple stages throughout the brew day – they are practically overflowing out of the kettle during boil and whirlpool, and we even send it back over a bed of hops on its way to the fermenting tank. After fermentation, the beer is bottle-conditioned for several months until it has reached a point where we all agree that it’s time to share the love.Dragon Saison is an any-time, any-place beer that pairs well with any-food. It’s light enough to be enjoyed during a lazy day in the sunshine, it’s flavorful enough to be enjoyed with friends searching for that new cool brew, and it’s special enough to deserve a spot in your cellar.
