Basket of Herbs: Lemon Verbena & Lemon Balm Sour is our way of capturing the summer herbs for the winter. In the same spirit of picking blackberries to make jam for the long winter. We brew Basket of Herbs to capture that moment in time.Lots of lovely sherbet lemon, herbaceous floral tea on the nose. Delicate acidity produced by mixed fermentation of lactobacillus and saison yeast. Finishes dry and effervescent, a touch of tannins from the herbs help the rhythm at the end come to a full stop.
