Oubliette of Staves is a saison aged in wine barrels for 14-18 months, displaying our quintessential saison profile of lime zest, hay and subtle Brettanomyces funk.The initial blend was two noteworthy barrels, one displaying a pillowy soft saison with delicate notes of vanilla spice, and the other a playfully acidic funky-lime saison. These harmonized for ten days after being blended with our largest barrel (a 600 litre Demi Muid from @rosewoodwine), bringing notes of goat-hay, tingly acid, and rounded oak body.This beer was then transferred over petals of wild yarrow foraged with Dr. Amy (@amyproulx78), bringing a subtle sage-brush herbaceous note to the mélange.
