A Saison fermented with Torulaspora and Kluyveromyces non-saccharomyces strains!Aged on lyees and batonnaged to get some extra complexity from those almost wild yeasts cells!Brewed with wild thyme (Thymus capitatus) and Sideritis purpurea that grows literally beside the brewery in the summer!
