We've used Southern Cross in a few batches in combination with other hops (e.g., Green Dragon), but we wanted to give it a try in a starring role! This New Zealand variety is loaded with stone fruit aromatics (nectarine, apricot) from the ester 2MiB, so we paired it with an expressive Conan isolate for even more peachiness!
