Fresh 2021 harvest New Jersey Riesling grapes were hand crushed and destemmed directly into an oak cask to referment with extended grape skin contact. This beer is based on a three-year blend of our spontaneous beer with an average age of 25 months, a portion of which was aged in a cognac cask. It pours a beautiful yellow-gold with crisp aromatics of fresh apples, pears and grape skins along with flavors of citrus carried by a full minerality.
