Mont Sainte-Victoire: Spruced (Blend 2)

Our spruced-up spontaneous impression of the monolith of saison. This second edition was brewed in the spring of 2022 with NJ pils malt & raw wheat, and PA buckwheat & oats, brewed in a wood-fired kettle and spontaneously open fermented on 2022 harvest estate spruce tips. After a year of aging in neutral oak, the beer was conditioned on freshly gleaned 2023 harvest spruce tips from the same trees.
